Two findings that change how a restaurant runs. These aren't theories — they're real measurements.
1. Do you know how often your servers visit each table?
In most restaurants, if you ask the owner they'll say "often, of course." The reality: we measured 12,000 table visits over 3 weeks. The average was every 28 minutes. But not all visits are equal.
Tables visited within less than 22 minutes of being seated generated 44% higher average tickets. The upsell — dessert, coffee, digestif — almost always happens on the second visit, not the first. And if that second visit takes more than 30 minutes, there's no dessert.
Result: getting the team to make that second visit on time — around minute 22 — is worth $18 more per table. At a 40-table-per-night place, that's $260,000 extra per year. Without selling more dishes. Just timing.

2. If every server sold like your best server, you'd make $38K more per month
At the bar we reviewed, Caro averaged $480 per ticket. Dani averaged $330. Same shift, same tables, same menu. The difference: Caro suggests. Dani takes the order.
We measured upsell by server. Caro converts 3 out of 10 tables into an extra dessert or coffee. Dani converts 1 out of 10. It's not a lack of effort — Dani didn't even know that was being measured. When he saw it, he asked for training.
Dani trained with Caro for two weeks. His ticket went from $330 to $410. On a team of 5, closing that gap is worth $38,000 a month. Without hiring anyone new.

What we offer is free for selected clients. Not for exclusivity's sake — but because we can only help you if we can run a real analysis. We'd rather be honest from the start.
What we need from you
- 100% of your order tickets, exported straight from your system — plus any manual adjustments.
- Something to reconcile against — ideally one or two months tied out to bank and/or card statements.The more complete, the sharper the analysis.
